'THE ELEVENTH HOUR' SHIRAZ (2019)

WINEMAKING

The red clay belt running North to Greenock creates an ideal environment to grow Shiraz. The compact soils provide fruit that is juicy, spicy and concentrated. Stonewell’s hard red-brown soils add another layer of complexity to the wine, with a darker fr uit profile. Destemming without crushing, each parcel is fermented in separate batches in open fermenters before basket pressing. Aged in seasoned oak barriques, the wine was moved to tank in individual components for several months before blending and bottling without fining or filtration.

SENSORY

Opaque core into a deep ruby red rim. Blueberry compote and wood varnish on the nose. Plummy fruit on entry, layered with liquorice and rosemary. Good length with a grip of tannins that helps dry the finish. 

FOOD PAIRING

A big beefy stew pairs perfectly with this Shiraz, adding some subtle spices to elevate the spicy aroma and palate. Stews cooked in wine will help bring out these beautiful flavours.
