WINEMAKING
Hand-harvested and co-fermented in stainless steel for 48 hours, with a whole bunch of skin-contact
The wine was then pressed back into a single ceramic egg where it sat undisturbed for 14 months elevage
Bottled (without racking) directly from the vessel
Wild ferment, No SO2, No pumps, No additions, No oak
Bottled by gravity, Sealed with premium natural cork and beeswax
WHAT'S GOOD?
A delicately orange wine with a very refined and elegant nature to it
Granite soils gave the wines a lean and very mineral-driven nature, showing an abundance of energy with such delicate and precise structure
Great tannin, largely due to the Pinot Gris/Grigio element
The time in the tank on gross lees has given yet another layer of fine complexity to the wine
As pure a representation of site, place, and time
Only 355 bottles were produced for this vintage
