Note from James: “Chenin Blanc (95%) is destemmed and pressed to barrel and tank. Sauvignon Blanc (5%) is destemmed and fermented on skins for 2 weeks.
A 1000 Fires is yellow-green in color, citrus, and apples with long acid drive.”
