• Soil Type: 50% calcareous marne slopes and two smaller parcels of red slate surrounded by garrigue

WINEMAKING

• Whole bunch, foot stomped 

• Short maceration of 5 days

• No racking, no pumping over

• Pressed into Austrian foudre and aged on lees for 5 months

• Racked from the lees before bottling

• Bottled with no added sulfur 

• Unfined and unfiltered
