Inspired by Ganevat's Pinot Noir - embracing elegance, power and complexity at such low alcohols
Healthy grapes picked at a baumé of 11.3 and a TA (titratable acid) of 12.3
Hand-sorted, hand destemmed, and cold-soaked for 48 hours to start fermentation very slowly
Fermentation lasted 6 days before pressing to a small stainless steel tank to finish fermenting as juice
