Skin-fermented Delaware in amphora for 10 - 13 days, blended with 12-hour skin-contacted Steuben, Neo Muscat, and Merlot
10% whole-bunch, skin-on fermented
50% aged in amphora, the rest aged in stainless steel vats
Wild yeast, unfined, unfiltered, without any additives including added sulfites
WHAT'S GOOD?
Candy-like aromas from table grapes to start with, then hints of orange peel and jasmine tea gradually appearing
Fresh and fruit-forward tastes, some soft and well-rounded acidity from the grape itself, complemented by an umami aftertaste from the maceration
An expressive wine with rich flavors - some herbal bitterness derived from whole-bunch fermentation and skin-contact, tightened up with soft tannins at the end for a pleasant finish
Best to drink at a temperature that is not too cold (no less than 10℃)
