100% Delaware grapes from Yamagata prefecture
15% is whole bunch fermented. The rest undergoes skin fermentation for 6-14 days in amphora and resin tanks
75% aged in amphora, 25% aged in resin tanks for 8-9 months
Wild yeast, unfined, unfiltered, without any additives, including added sulfites and antioxidants
WHAT'S GOOD?
Candy-like aromas from table grapes to start with, then hints of diospyros decandra fruit and jasmine gradually appear
Fresh and fruit-forward tastes, some soft and well-rounded acidity from the grape itself, complemented by an umami aftertaste from the maceration
An expressive wine with rich flavors - some herbal bitterness derived from whole-bunch fermentation and skin contact, tightened up with soft tannins at the end for a pleasant finish
Best to drink at a temperature that is not too cold (no less than 10℃)
