Delaware was destemmed and left on skins for 24 hours, then blended with 12-hour skin-contacted Niagara and Delaware
Fermented and aged for 7 months in stainless steel vats
Wild yeast, unfined, unfiltered, without any additives including added sulfites
WHAT'S GOOD?
Refreshing, with some sweet and sour taste of table grapes, combined with the fresh aroma of Japanese pears
Soft salinity and tannins on the palate, with the lingering taste of young fresh herbs for a tightening finish
