WINEMAKING

• Grapes were picked, destemmed and pressed into a stainless steel tank to ferment. Once almost dry, the wine was bottled, so the last phase of the fermentation occurred in the bottle, trapping the CO2 in the wine.

• Wine was let rest on lees for 3 months, then disgorged.

WHAT'S GOOD?

• Crunchy cranberries, light texture and fine foaming bubbles.

• Fefreshing.

• A touch of Pinot Gris adds a bonus layer.
