• 94% Delaware, 6% Steuben - Delaware, and a tiny bit of Steuben from Yamagata prefecture

• 12-hour skin-contact Delaware, blended with Steuben had 12-14 hours of skin-contact

• Fermented in stainless steel vats

• Bottled with 12 g/L of residual sugar for a light pétillant effect

• Wild yeast, unfined, unfiltered, without any additives including added sulfites
