WINEMAKING
Harvested and sorted by hand, each variety separately.
Gently destemmed, berries not crushed to avoid overextraction. Remontages, open-top vats.
Pressing: Free-run juice only.
Spontaneous dermentation in 11 days. Then 4 more weeks on skins post-fermentation.
Ageing in 3000-litre Gamba and Stockinger oak barrels (2-to-7-year-old barrels).
No fining, no filtration.
No sulfur addition.
WHAT'S GOOD?
Slightly fizzy yet very fresh, cool, summery and a lot of fun to drink.
Bustling with fresh strawberries, pomegranate & earthy mint, making all the senses tingle with excitement.
A hint of chalky mineral on the back of the palate to round it off.
Best served lightly chilled (13-15°C)
