WINEMAKING
Harvested and sorted by hand
Gently destemmed, berries not crushed to avoid over-extraction. Remontages, open-top vats, each variety separately
Spontaneous fermentation in 15 days. Then 3 more weeks on skins post-fermentation
Aged in 3000-liter Gamba and Stockinger oak barrels (2-to-7-year-old barrels)
No fining, no filtration
Sulfur addition: 3 ppm before bottling

Experiencing the freshness on the nose with red cherry, pomegranate & red plum, alternating with earthy notes, spices, and dried herbs
Good acidity, light tannin, slightly fizzy - you know it’s a red wine made for summertime
Luscious mouthfeel with a long finish
