WINEMAKING
Harvested and sorted by hand, each variety separately.
Gently destemmed and macerated on skins overnight.
Each variety was pressed separately in pneumatic press, ~20 hours. No pumping, juice only moved by gravity.
Spontaneous fermentation in ~40 days.
Cofermentation of all varieties together in oak vats.
Ageing in 3000-litre Gamba and Stockinger oak barrels (2-to-12-year-old barrels).
No fining, no filtration.
No sulfur addition
WHAT'S GOOD?
A drink to have with your everyday meals.
Lighter body, medium acidity.
Spicy and grassy, later on it develops into grapefruit and peach.
The wine has a very drinkable expression and tempts you to take more sips.
A completely different wine when it's a little oxidised and warm. Balanced and very pleasant, refreshing and fresh. A little grapefruit and lemon in the aftertaste.
Best served well-chilled (9-11°C).
