Age of vines: 35-40 years old
WINEMAKING
Harvested and sorted by hand. The whole grapes are foot-stomped and left for 12 hours on skins
Pneumatic press for 15 hours, followed by a 4-month spontaneous fermentation
Aged in a new 3000L Stockinger oak barrel
No fining, no filtration
Sulfur addition: 5 ppm before bottling
Bottled in October 2022
WHAT'S GOOD?
A crowd-pleaser, achieving a perfect balance of depth, body, sharp minerality, excellent acidity and structure
When the first edition was made in 2015, it was dominantly Sauvignon Blanc, yet the wine had an aroma reminiscent of juniper berries and a bitter aftertaste like tonic water, hence the name!
Riesling is now more prevalent both in the vineyard and in the cuvée, adding to the wine's precise structure, energy, and aging potential, balancing out its signature depth
Sourced from a micro-region with sandy loess soil, forcing vines to dig deep for water. This, along with old vines and slow ripening, contributes to extraordinary finesse and vibrancy
