WHAT'S GOOD?
Some Merlot are destemmed and fermented in stainless steel, while some are a whole bunch fermented for 10 days.
Pinot Noir is whole-bunch fermented for 20 days.
Pinot Blanc is fermented in the barrel and co-fermented with Alicante Bouchet in 10 days.
Aged in stainless steel, Spanish Amphora, and 225L barrel.
No filtration, fining, or additives.
The wine is named after Yuki's favorite wine bar in his hometown - Kyoto.
