Vinification starts with classic fermentation of 100% stem-in berries
Gentle push by the pneumatic press for free-run juice only, followed by spontaneous fermentation in stainless steel and wood for 14 days, with gentle remontages (pumping over)
Aged in stainless steel and wood
No fining, no filtration
Sulfur addition: 2 ppm at bottling
Bottled in March 2024
