WINEMAKING
Grapes are hand-harvested when they tasted the most delish while still having a nice line of acidity through them.
100% Grenache Noir, whole bunch pressed immediately after harvest to avoid any red colour getting extracted from the skins.
Juice was left to naturally ferment through both primary fermentation in stainless steel before being roughly racked into one single puncheon and aged with minimal sulfur.
Bottled with no sulfur added, no fining, no filtration.
WHAT'S GOOD?
100% red grapes treated as a white wine, definitely a style you don't see every day.
Aged in barrels for nine months, this wine is a complex and textured white with a floral nose.
