GROWING

• Pinot from Deanery Vineyard in the heart of Piccadilly Valley, featuring red clay over sandstone on an eastern-facing slope at the bottom of a cold, deep valley

• Gamay from 30 year-old vineyard in Totness, with black sandy soil overlying petrified schist

• Vines are V.S.P. trained and spur-pruned

WINEMAKING

• Carbonic fermentation for 6 days in a 2500L fiberglass tank

• All free-run juice and light pressings are transferred to 800L ceramic eggs to finish fermentation and rest.
