GROWING

• Viticulture: Practicing biodynamic

• Soil: Loam over clay

• Grape from Kuitpo Vineyard

• Age of vineyard: 30 years old

• 2021 was one of the best McLaren Vale vintages in the 21st century, with really favorable weather conditions.

WINEMAKING

• 100% hand-picked whole bunch Red Sémillon from Kuitpo.

• De-stemmed, then half in stainless steel with extended skin contact and 2 batches in ceramic eggs filled with skins for about 250 days.

• All are brought together about 3 months before bottling, with time to settle in and relax.

• No fining, no filtration.

WHAT'S GOOD?

• Super herbaceous - Koen calls this a “proper winter wine” but it can work with any time of the year.

• A soft complex and easy drinking version of Campari, without the bitterness and no need for a mixer with it.
