Soil: Ponca, which is composed of alternating layers of marl and sandstone. A very well-drained soil, suited to the high rainfall level of the region

WINEMAKING
Grapes are destemmed, gently crushed with a pneumatic press
2-3 months of skin contact in old Slavonian oak vats (no temperature control, no sulfur added)
Racked and aged on lees in huge Slavonian oak casks for 3 years (racked twice a year)
Bottled without filtration and the addition of sulphur
WHAT'S GOOD?
Jakot is the reversal of ‘Tokaj’, which can now only be legally used for the region and winemaking style from Hungary. The idea was from Stanko’s wife, Suzanne, and is now being shared and used by other winemakers in the region

Robust with notes of lemon honey tea, ginger, dried stonefruits with a twist of almond brittle, and nuance of wildflowers and savory herbs
Good amount of tannin, which works as a natural preservative. Integrating with the high level of acidity, this gem possesses great potential for aging, probably for decades
