Soils: Ponca, which is composed of alternating layers of marl and sandstone. A very well-drained soil, suited to the high rainfall level of the region

WINEMAKING
Grapes are destemmed and fermented with native yeast in oak vats, no sulphur added, no temperature control
8-14 days on the skins, gently pressed and transferred to 3500-liter Slavonian oak barrels and stayed on lees for 1.5 years
Bottled without filtration and with only a minuscule amount of sulfur
At least 4 months in a bottle before release
