Chardonnay: 2.5 hectares of 30-year-old vines
Tocai Friulano: 1.5 hectares of 30-year-old vines
Yield: intentionally kept low, roughly 4-5 clusters per vine, to ensure concentration
Soils: Ponca, which is composed of alternating layers of marl and sandstone. A very well-drained soil, suited to the high rainfall level of the region
Hand harvested
WINEMAKING
Grapes are destemmed and co-fermented with native yeast in oak vats, with no sulphur added, and no temperature control
8-14 days on the skins, gently pressed and transferred to 6000-liter Friulian-made French oak botti and stayed on lees for 1 year
Bottled without filtration and with only a minuscule amount of sulfur
At least 4 months aging in the bottle before releasing
