WINEMAKING
Pinot Meunier was to bring the density, intensity, and structure from 2018 - a vintage of small berries and high extraction.
Sémillon from 2019 was a 100% whole bunch carbonic and aids in a fruity lighter nose bunch also adding weight through the palate.
Cabernet Franc from 2020 was on skins for 4 days and then fermented in a ceramic egg for the roundness of acid and complexity.
Separately aged in barrels and blended just before bottling.
WHAT'S GOOD?
A snapshot of 3 vintages - 2018, 2019, 2020.
This has bags of wild strawberry sour cherry with a meaty whiff.
It is tight, with mouth-coating tannins that are evened out by racy, tart acidity.
This is a natural wine that is on the right side of funk.
