WINEMAKING
Grapes: 100% Verdelho from certified Biodynamic block in McLaren Flat.
Skin fermented for about 10 days and then pressed and aged for 12 months in a large stand-up foudre.
Pumped over twice a day to extract texture and colour.
Aged on fine lees until 3 months before bottling.
No fining, no filtration.
WHAT'S GOOD?
Bright, lifted, everything Verdelho can bring to the table.
Soft white fruit components and beautiful floral notes, with tannins and zesty citrus as a backbone.
The name for this cuvée came from Dave thinking ‘Salsa Verde’ was easier to write on the barrels than VDLHO, so they took the name and ran with it.
