WINEMAKING
The amounts of each grape in the blend are adjusted each year to suit the vintage.
Each variety went in separate fermentation in stainless steel with different time on skin.
Each variety was then pressed back to stainless steel and stored on solid lees during the winter (also in stainless steel) before gravity racking, blending, and bottling in the early summer.
WHAT'S GOOD?
Medium-bodied wine with great texture.
The wine is pure and clean, with great tension and energy without losing any of its charm and distinctive personality.
It will improve over time with bottle aging and develop more grace and complexity.

“This is always the most anticipated release of the year for us. And, with good reason.
Staring at the Sun is what you might call the flagship wine (for want of a better term), it was the first wine released (2015) under Momento Mori Wines and has gained somewhat of a cult following in Australia and abroad.
I started making wine on a quest to make wines precisely like this one. And subsequently to keep trying to hone and refine them year in and year out no matter what the cost or how inefficient the methods are deemed to be.”
