Grapes taken from Slovenské vineyard in Moravský Žižkov, a true heart of Nestarec vineyard
Age of vines: 20-25 years old
WINEMAKING
Harvested and sorted by hand. The whole grapes are foot-stomped and left for 12 hours on skins.
Pneumatic press for 20 hours, followed by a 2-month spontaneous fermentation.
Aged in 9 year-old 3000L gamba oak barrel.
No fining, no filtration
Sulfur addition: 5ppm before bottling.

The longer than usual (for Milan Nestarec wine) skin-contact, followed by 2-month fermentation and a few years aging, Milan has shown us how this wine can age beautifully and marvelously express its place.
