Age of vines: 15-40 years old
Yield: 30hl/ha
WINEMAKING
Harvested and sorted by hand. The whole grapes are foot-stomped and left for 12 hours on skins.
Pneumatic press for 21 hours, followed by an 11-month spontaneous fermentation.
Aged in new 3000L stockinger oak barrel.
No fining, no filtration.
Sulfur addition: 4ppm before bottling.
