WINEMAKING
Soil: alluvial clay
Age of vines: 9 yrs old
Dry grown fruit, the result of utmost cares and loves from Ernst (the grower), combined with the ocean winds.
Grapes were picked, brought to the winery and destemmed into 1T fermenters.
Fermentation took 2 weeks, after which the wine was pressed into old french barrels.
The wine was bottled after 10 months in barrel.

Blackberries and cinnamon. Plums and herbs. Cinnamon.
